Flapjacks

So everyone loves a good flapjack after having fasted a long and hard day or if you like me, when you need a sugar rush. So I have a really quick and simple recipe that does not take any special tricks and takes less than 10 minutes to put together.

What you would need
2 eggs
4 tables spoon Sugar
10 ml vanilla essence
2 cups of Flour
2 teaspoons baking powder
1 cup of milk

Method

  1. Crack open eggs, add sugar and whisk till combined nicely.
  2. Add the vanilla essence to milk and stir.
  3. Now add your dry and wet ingredients and mix till there are no lumps in your mixture.
  4. Let your mixture stand for five minutes while your stove heats up.
  5. On medium heat, lightly grease your pan with about 5ml of oil, it should just be enough to grease, you need to make sure that there is no excess oil in the pan. No one likes an oily FlapJack.
  6. You know you can turn over your flapjack when it starts to bubble and the batter starts to dry up. Turn and leave for about 45 seconds to one minute (depending on your heat).
  7. Now you are ready to serve with the toppings of your choice.

Personally I love caramel, banana and fresh cream so what I do is, I mash the banana, stir in the caramel an add a heaped teaspoon on my flap jack with a dollop of cream and a sprinkle of cinnamon.

P.s if you prefer having a crepe/ rolly polly (as us South Africans know it) then only use a half cup and add one cup of water to your mixture.
