Butternut Soup

Winter warmer Butternut soup

Who doesn’t love a good butternut soup on a cold day? when all you want to do is snuggle up to something warm, whether its your bed, duvet, shower head or husband. We all have those days and this is something that will cheer you up when eating it.

Its very simple to make, and you can spice up the flavour by changing up the ingredients of the butternut soup. Sometimes I flavour the soup with naartjie, cinnamon sometimes, sweet potato and honey, sometimes all of that combined and its amazing so here is the one that I found really interesting but NOM NOM NOM…

What you would need:

Two Onions chopped

two sticks of cinnamon

Two green chilli

Two Potato cut into cubes

One large Butternut or two small

One tin of dessert cream

black pepper

salt

Method

1. Sauté onions, chili and cinnamon till soft.

2. Add potato and butternut and stir fry for one to two minutes

3. Add 750ml of water, replace the lid and cook for 30 min or soft.

4. Add seasoning and cream simmer for 3 minutes.

5. Using a stick blender, blitz till smooth.

6. Serve with something green, some toast and a sprinkle of paprika.

 

P.s Soraya Saffodien please let me know how your soup came out. There are lots of ways to spice up this recipe and change the flavour. You could even roast the butter before to make roasted butternut soup. Don’t be shy you could even post a picture of your creation.
