Boeber is a traditional Cape Malay sweet milk that is so versatile it could be used as an appetizer, starter, main dish or dessert. Boeber, with the extras are not always found however, It’s part of the Muslim culture in the Cape to be enjoyed on holy nights.
The are countries that have their own version of Boeber, like Malaysia, India and even China with small changes to the Ingredients.
My friend all the way in Abu Dhabi messaged me a couple days ago for this recipe as she has some guests from Cape Town and wanted to give them something homey to have. What better than Boeber?
What you would need?
100g butter
2 cinnamon sticks
2 cardamon pods
200g vermicelli
1/2 cup sugar
50g Sago
3tbs Rose water
2 Liters milk
Pinch of saffron
Half tin condensed milk
Boil 250 water and soak the saffron and sugar.
Cover the sago in water and soak for 30min.
Melt butter, cinnamon and cardamom till nutty brown.
Add your vermicelli and stir fry till golden.
Add your saffron and water mix, cook for 5 minutes.
Add milk, condense milk and soaked Sago and simmer for 20min-30min. Add rose water and serve
Serve with roasted almonds and sultanas for garnish. This is an awesome add on.
