Mushroom bolognese

The perfect recipe to change up the regular meat dish to give you a variety in your diet that hs loads of flavour without meat! Try this bolognese, you will be surprised.

I have been trying to cut down my meat intake. As you know I believe everything is healthy in a certain quantity, and what I have been learning about meat is that eating it everyday is very bad. Yes, we all need protein but there are many ways to have protein that doesn’t mean having animal produce.

If your fasting, your body is dehydrated and having protein every day means your body has to work really hard at night to process what your eating after a long day of being dehydrated. Your kidneys, liver and other organs are also being detoxed and rejuvenated but yet at night we trying to cram in as much as we can which is not good.

Here’s a simply way to change up your regular bolognese adding variety to your meals and spice up your eating.

What you will need?
One onion chopped
2 garlic cloves
One chili chopped
One tin whole peel tomato
A half green pepper
Squeeze of lemon juice
125g mushrooms sliced
2 tablespoons honey
250g pasta boiled with salt
1 tsp salt
1/2 teaspoon coarse black pepper
Fresh basil garnish
Grated Parmesan for garnish

What you will need to do?
In a medium sauce pan, drizzle a bit of oil with a cinnamon stick. Add onion, garlic, chili and cook them for 3-4 minutes or till browned.

Add the whole peel tomato, lemon juice and honey and cook for 5-7 minutes.
Add pepper and mushrooms and cook for 7 minutes. Season and check the acidity. If the dish is sour add more honey or 50ml milk. Cook for a further 7 minutes stiring regularly.

Serve with your boiled pasta, topped with chopped basil and Parmesan.

P.s you can replace the mushroom with your favourite vegetable.
